On Monday I told you guys about Crocktober, and showed a little of my fall decor. Did you like my girl Megan’s Crocktober FB page yet? If not, you totally should! She already shared one recipe and there will be another tomorrow and everyday this month. I love it! Yesterday I shared a picture of my crockpot lunch on Instagram and everyone wanted the recipe. Crocktober is in full effect!

Mama Momtourage’s Spicy Thai Soup (tastes very similar to La Bou’s)
3 tablespoons red curry paste
2 12 ounce cans of coconut milk
2 cups chicken stock
2 tablespoons fish sauce
2 tablespoons brown sugar
2 tablespoons peanut butter
4 oz white mushrooms, sliced
2 lemongrass stalks, bruised (cut off bottom 2 inches, peel off outer layer, and hit the stalk with the back of a chef’s knife to release the juice and oils)
1 1/2 pounds chicken thighs
1 onion, thinly sliced
1 heaping tablespoon fresh ginger, minced
1 tablespoon lime juice
cilantro and chopped peanuts for garnish
cooked white rice
Mix the curry paste, coconut milk, chicken stock, fish sauce, brown sugar and peanut butter in the crockpot. Put the chicken thighs, onion, ginger, and lemongrass in next. Cover and cook on high (4) or low (8). When you’re ready to eat, remove the chicken and chop or shred it, return in to the crockpot, and stir in the lime juice and cilantro. Ladle your soup over cooked white rice (preferably jasmine) and top with chopped peanuts and cilantro. YUM!
Next time I may add a Thai chili to the crockpot for a while. I think I need to up the spice quotient. But it was delicious and very satisfying. Obviously you could add anything that strikes your fancy like: snow peas, regular peas, carrots, chicken breasts… you get the idea. It should be noted, that I tried a simpler recipe and it was too bland so I researched a ton of similar recipes and mixed the perfect amount of spices (for me anyway). I’m OBSESSED with the Spicy Thai from La Bou and this is soooooooo similar. LOVE it!
