Hi everyone! I’m back with another baking lesson and this one is short and sweet…pun intended! Delicious Cranberry-Orange Scones to treat your holiday houseguests to a homemade sweet treat in the morning to accompany their coffee. You likely have all the ingredients already… the bag of cranberries and Greek yogurt might be the only additions to your shopping list. So easy!
- 2 cups flour
- ½ cup sugar
- 2 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- Zest of one large orange
- 4 tbsp. unsalted butter
- 1 cup fresh cranberries, rinsed and patted dry
- 6oz container of lemon Greek yogurt (any flavor will do, I prefer the lemon flavor in this particular scone)
- Sugar for topping (Raw turbinado sugar is best, but regular sugar works just fine)
Preheat the oven to 425 degrees and assemble the ingredients.
In a Kitchen Aid mixer fitted with the paddle attachment mix together all of the dry ingredients. Add in the orange zest and mix to incorporate.
Cut the butter into squares and add to the mixture. Mix until mixture resembles coarse meal.
Toss in the cranberries and the yogurt and mix together. You might hear the cranberries pop a bit and that is ok!
Turn the dough out onto a floured surface and fold it over a few times. Pat the dough into a circle that is about 1-inch thick.
Place onto a baking sheet and dust with a bit of sugar. Bake for about 15 minutes (this varies based on your oven so employ the toothpick method inserted in the center to ensure it is fully cooked). Once cooked, let cool for 10 minutes and then cut into wedges for serving. The scones are delicious warm or cool…your choice.
